Hunter Valley Premium Wagyu is selected from the best available Fullblood genetics. It is grown and processed with care following best Japanese principles of production to provide for you,the best possible eating experience.
 Hunter Valley Premium Wagyu is presented under two labels:
- Select, which is characterised by a balance of medium levels of marbling and the rich flavours of Umami, resulting in a robust beef flavour. It has an Ausmeat marble score range of between 4 and 6. Market research suggests that this range is most appreciated by families for day to day consumption.
- Executive, which is characterised by extremely high levels of marbling
Our carcases are matured for 14 days. Cuts are then individually portioned and chilled to guarantee a perfect, tasty and succulent product.
All orders are carefully selected and processed at Everson's of Frederickton near Kempsey, NSW which is a fully accredited and licenced meat processing plant. Primals are further processed into portions at Gowa Foods Artarmon, Sydney.
Orders are processed fortnightly and depending upon the day of your order there can be up to twenty one days lead time to delivery. Our friendly sales staff will contact you to confirm your order and to arrange delivery details as we cannot leave meat unattended on your doorstep.
All meat is delivered fresh to your door by refrigerated courier and is guaranteed. We advise you to set aside enough for 2 to 3 days requirements before freezing the rest to lock in the flavours
Beef packs will contain a selection of cuts in the same percentage as they occur in the carcase. There will be minor variations from pack to pack to allow for individual carcase differences. Quality however will not be compromised. All packs will be above the minimum weight advertised.
Beef packs will contain a selection of cuts as close as can be to their proportional representation in the animal. Because some muscles are very small they cannot be practically divided into the packs. Therefore there will be some variation from pack to pack. The meat in your pack may thus be represented by Strip loin, Cube roll, Tenderloin, Rump, Small Roast, Gourmet Sausages, Casserole, Mince, Mini steaks and Diced [for stirfry] Finally there will be packs of thin sliced beef. These are intended for very fast cooking into Shabu Shabu and Jakiniku [recipes at the end of this website on the feedback page] or into rich beef casseroles. The deliciously tender beef strips are quick and easy to prepare into a satisfying meal.
