Full blood Wagyu meat is characterised by the presence of fat between the muscle layers known as marbling.  The marbling is usually scored on a scale of 1 to 9 with 9 being the most marbled.  Highly marbled meat will by virtue of its structure be the most delicate of all meats and in Japan it would normally only be cooked in very thin slices which are passed over a hot pan for less than a minute. Alternatively, the meat can be dipped in a very hot, fragrant stock for just a few seconds.

The Full blood Wagyu beef in your Hunter Valley Premium Wagyu pack will contain around half the marbling of score 9.  Because it is not so heavily marbled it will be a little more robust but nevertheless, care needs to be taken with the cooking process. Thinly sliced beef, may be cooked in a very hot oiled pan and quickly turned before dipping in Soy Sauce or Wasabi. It may also be quickly seared in hot oil and then added to stir fry with vegetables or perhaps to a great salad.  Usually the meat is so flavoursome that additional condiments are not required. If cooking steaks, it is essential that a very hot pan is used and the meat be added to hot oil.  Sesame or olive oil is fine. Grape seed oil will give you the hotest temperature. The meat 
should cook until the blood just rises to the surface of the meat and then be turned once.  The meat is cooked when it springs back when lightly pressed with a knife.  Cooking for longer will gradually turn the meat to well done. The meat should never be salted until it is cooked as salting, prior to searing will draw all the juices out of the meat leaving it dry and tasteless.
